Since this week has been in the 90’s, I’ve been trying to brainstorm refreshing, sweet, and healthy treats to feed my family. What’s better than a sugar-free (stevia) Jell-O alternative that feeds our brains and also helps us to focus?! Well, that’s pretty hard to beat.

What you need:

2 cups water, just of the boil.

5-6 Axio packets depending on the desired flavor and strength (buy it here)

Unflavored beef gelatin (I like Great Lakes brand. Buy it here.)

What to do:

Add the Axio packets to boiled water. I used 5 Red Raspberry Axio packets. This one is my favorite because it not only tastes great but, it’s caffeine free. Axio is an all natural powdered drink mix that comes in convenient packets for on the go. And, despite being caffeine free, it amps up our natural energy levels without the crash and burn later.  You do need more to be able to taste it in the Jell-O, than if you were just adding it to water as a drink.

When the Axio is completely dissolved, briskly stir in the gelatin a little at a time. I used 3 and a 1/2 tablespoons of Great Lakes beef gelatin. Everyone has their own desired consistency for Jell-O though. So, you might have a little trial and error before you find your preference. But that’s okay, that’s half the fun!

When that’s completely dissolved, add 2 cups of cold water to the mixture.

Pour into a dish and put it in the refrigerator until it’s firm.

And, that’s all there is to it. After refrigerating your Axio Jell-O is ready to be served. Go ahead and make a double batch since this won’t hang around too long. It doesn’t in our house anyway.
